Pectin is q purified carbohydrate product. It was obtained from apples,citrus,etc. The color

of apple pectin powder may vary from yellow-white to light tan. It is widely used in processing of food and beverages, such as jam, jelly, fruit juice, soft sweets, ice cream, sour milk or fruit yogurt, soymilk. It is functions as gelatinize, suspending agent, stabilizer, and thickening agent.
